Strawberry Lemon Fool

  1. Chill a medium sized bowl and your beaters in the freezer while you start the recipe.
  2. Combine the 1 pound of sliced strawberries and granulated sugar into a medium sized bowl. Let sit for 10 minutes. Then puree half of the strawberries. Pour the strawberry puree back into the bowl of the remaining sliced strawberries.
  3. In a medium-sized bowl (the one you had in the freezer), add heavy whipping cream, powdered sugar, lemon juice, and vanilla extract. Beat until soft peaks form (about 5 minutes to 7 minutes - do not over beat or you'll have butter). Gently fold in lemon zest. (If you use a cold bowl and cold beaters the cream will whip up faster)
  4. Add the sliced strawberry/puree mixture to the whipped cream and gently fold to combine. Divide equally into 4 glasses or bowls and garnish with a fresh strawberry half and mint leaves.
  5. Cover with plastic wrap and pop into the fridge until you're ready to eat.
