Strawberry Lemon Fool
- 1 pound Fresh Strawberries, Hulled And Sliced
- 1/4 cups Granulated Sugar
- 1 cup Heavy Whipping Cream
- 2 Tablespoons Powdered Sugar
- 1 Tablespoon Fresh Lemon Juice
- 1 teaspoon Vanilla Extract
- 1 teaspoon (heaping) Lemon Zest (zest Of About 1 Lemon)
- 2 whole Strawberries, Halved (optional For Garnish)
- 4 whole Mint Leaves (optional For Garnish)
- Chill a medium sized bowl and your beaters in the freezer while you start the recipe.
- Combine the 1 pound of sliced strawberries and granulated sugar into a medium sized bowl. Let sit for 10 minutes. Then puree half of the strawberries. Pour the strawberry puree back into the bowl of the remaining sliced strawberries.
- In a medium-sized bowl (the one you had in the freezer), add heavy whipping cream, powdered sugar, lemon juice, and vanilla extract. Beat until soft peaks form (about 5 minutes to 7 minutes - do not over beat or you'll have butter). Gently fold in lemon zest. (If you use a cold bowl and cold beaters the cream will whip up faster)
- Add the sliced strawberry/puree mixture to the whipped cream and gently fold to combine. Divide equally into 4 glasses or bowls and garnish with a fresh strawberry half and mint leaves.
- Cover with plastic wrap and pop into the fridge until you're ready to eat.
