St. Patrick’S Day Cookies (Green Sandwich Cookies)
- FOR THE COOKIES:
- 1 cup Butter
- 1 cup Sugar
- 1 whole Egg
- 1 Tablespoon Vanilla Extract
- 3 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1 Tablespoon Green Food Coloring
- FOR THE FILLING:
- 14-1/8 ounces, weight Mascarpone
- 1-7/8 ounce, weight Sweetened, Condensed Milk
- 1-7/8 ounce, weight Coconut Cream
- For the cookies:
- 1. Preheat oven to 347u0b0F (175u0b0C).
- 2. Put butter and sugar into the bowl of a food processor and mix to combine.
- 3. Add egg and vanilla extract and mix to combine.
- 4. In a separate bowl combine baking powder with flour then add it into the rest of the ingredients. Mix until just combined.
- 5. Add food coloring and process until just incorporated.
- 6. Divide dough into workable batches and roll it out on a floured surface until about 1/4 inch thick. Use your preferred shape cookie cutter and cut. Combine dough scraps, roll it out and cut out additional cookies. Place cookies on a parchment lined cookie sheet.
- 7. Bake in preheated oven for 6-8 minutes. Remove from oven. Let them cool on the cookie sheet.
- For the filling and assembly:
- 1. In a mixing bowl using an electric mixer, combine mascarpone with sweetened condensed milk and coconut cream until creamy.
- 2. Spread 1.5 teaspoons of filling on the bottom of half of the cookies. Top with remaining cookies.
