Strawberry Jalapeno Margarita
- FOR THE INFUSED TEQUILA:
- 1 cup Tequila Blanco
- 1 whole Jalapeno, Quartered
- _____
- FOR THE STRAWBERRY PUREE:
- 1/2 pounds Strawberries, Hulled And Cut In Half
- 2 Tablespoons Agave Syrup
- _____
- FOR THE MARGARITA:
- Salt, Or Salt And Sugar Mixture, For Rimming The Glass (optional)
- Ice
- 1 cup Strawberry Puree
- 1 cup Triple Sec
- 1-1/3 cup Infused Tequila
- 4 whole Limes, Juiced
- Prepare the infused tequila:
- In a glass, add tequila and quartered jalapeno, seeds and all. Let the mixture sit out for at least 6 hours to infuse the tequila. Strain jalapeno out of the tequila before you use it.
- Prepare the strawberry puree:
- In a food processor, add strawberries and agave syrup. Blend until thoroughly smooth. You can push it through a fine strainer to remove the seeds if you like, however I like the way it looks with the seeds.
- For the drink:
- If you like salt on your glass, rub the edge of your glasses with a lime wedge. I like to rim the glass with a mixture of half salt and half sugar. Add ice to your glasses.
- Add puree, triple sec, infused tequila and lime juice to a shaker. Add ice to the shaker and shake. Pour the drink into each glass using a bar strainer (or your finger) to strain the ice. Garnish with lime, strawberry or even jalapeno. Enjoy!
