Strawberry Ice Cream In A Cinnamon & Sugar Cup
- 1/4 teaspoons Sugar
- 1/4 teaspoons Cinnamon, Ground
- 1 whole Medium Flour Tortilla (8' Mission Carb Balance Tortilla Preferred)
- 1 cup Frozen Strawberries
- 1/4 cups Milk, Non-fat
- 1 pinch Sugar (optional)
- Preheat broiler to high. Spray a ramekin with cooking spray; set aside
- In a small bowl mix together cinnamon and sugar; set aside.
- Brush the flour tortilla with a little bit of water and sprinkle with cinnamon and sugar mixture. Gently fit the tortilla into the ramekin and place into the oven. Broil for 3-6 minutes, until the top is lightly browned (be sure to watch it). Set aside to cool for about 3-5 minutes.
- Meanwhile in a blender or food processor, add frozen strawberries and milk and process until it reaches ice cream consistency. You may need a pinch more milk. Add about a teaspoon at a time until creamy. You can also add additional flavors to your strawberries such as sugar, chocolate chips, etc. If you do, blend again until incorporated.
- Add your ice cream into your tortilla cup! Serve and enjoy.
