Healthy Hazelnut Cookies
- 1-1/4 cup Hazelnut Meal Or Ground Hazelnuts
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Vanilla Powder Or Extract
- 1/4 teaspoons Salt
- 2 Tablespoons Honey Or Maple Syrup
- 1 Tablespoon Coconut Oil, Melted
- 1/8 cups Cacao Butter, Melted, Substitute Nut Butter Or Sunflower Butter
- 3 Tablespoons Water
- If using hazlenuts, ground nuts into flour before combining all dry ingredients together.
- Mix wet ingredients (honey or maple syrup, coconut oil, cacao butter and water) in another bowl before mixing them with dry ingredients.
- Place dough in fridge for around 30 minutes. This will make it easier to form cookies and it'll improve their texture. This step can be skipped if you're in a hurry, just know that the texture might be slightly different.
- Preheat oven to 170u0b0C (approximately 345u0b0F).
- Line a baking tray with parchment paper and scoop out 1 tablespoon of dough for each cookie. Form dough into a cookie. Use your fingers or back of a fork to press cookie and slightly flatten.
- Bake cookies for 18 minutes. The cookies should be slightly golden. They will still be soft while they are in the oven, but they will harden up slightly once cooled.
- Cool the cookies on a wire and store in airtight container.
