Applesauce Muffins

  1. In a medium bowl, beat butter and sugar until creamy. Sift flour and cinnamon into a large bowl; set aside. Mix applesauce, eggs, vanilla, clove, and allspice. Add baking soda (it may foam up a little). Add applesauce to dry mixture, then add butter mixture; mix well.
  2. Leave in the refrigerator overnight for spices to blend.
  3. In the morning, heat oven to 400 degrees. Spoon the batter into muffin papers about 3/4 full; bake for 15-20 minutes. Batter keeps well in the refrigerator for a long time.
