Applesauce Muffins
- 2 sticks Butter, Room Temperature
- 2 cups Sugar, Or As Low As 1 1/4 Cups Works Well
- 4 cups Flour, Whole Wheat Works Well
- 3 teaspoons Cinnamon
- 25 ounces, weight Applesauce
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1 teaspoon Ground Clove
- 1 teaspoon Allspice
- 2 teaspoons Baking Soda
- In a medium bowl, beat butter and sugar until creamy. Sift flour and cinnamon into a large bowl; set aside. Mix applesauce, eggs, vanilla, clove, and allspice. Add baking soda (it may foam up a little). Add applesauce to dry mixture, then add butter mixture; mix well.
- Leave in the refrigerator overnight for spices to blend.
- In the morning, heat oven to 400 degrees. Spoon the batter into muffin papers about 3/4 full; bake for 15-20 minutes. Batter keeps well in the refrigerator for a long time.
