Strawberry And Chicken Pasta Salad With Poppyseed Dressing
- FOR THE SALAD:
- 3 cups Spiral Pasta (Any Small Pasta Will Be Great)
- 8 ounces, weight Chicken, Cooked, Cut Into Bite Size Pieces
- 1 cup Fresh Strawberries, Hulled And Cut In Half
- 1 cup Grapes
- Salt And Pepper, to taste
- FOR THE DRESSING:
- 1/4 cups Orange Juice
- 1/4 cups Water
- 2 teaspoons Distilled Vinegar
- 1/2 teaspoons Sugar Or Stevia
- 2 teaspoons Poppy Seeds
- Cook pasta according to manufacturer's direction. When pasta is done, drain the water and add pasta into a large bowl to cool.
- Once cooled, add chicken, strawberries and grapes. Lightly mix together; set aside.
- In a small bowl, add all of the dressing ingredients. Whisk until combined. Pour dressing into pasta salad and mix until combined. Add salt and pepper to taste.
- Put bowl into the refrigerator and let the flavors marinate for one hour before serving. If you do not plan to serve after an hour of marinating, add the fruit when ready to serve.
