Terrine Of Turkey
- 2 lb. ground turkey meat
- 1 medium size onion, minced
- 1/3 c. minced fresh parsley
- 2 cloves garlic, minced
- 1/2 c. whole wheat bread crumbs
- 1/2 c. water
- 1/4 c. tomato paste
- 2 Tbsp. Dijon mustard
- 1 Tbsp. tamari or soy sauce
- 1 tsp. thyme
- 2 eggs, beaten
- red leaf or Boston lettuce leaves (garnish)
- 16 scallions (garnish)
- cherry tomatoes (garnish)
- Place the turkey in a large bowl.
- Add the onion, parsley, garlic, bread crumbs, water, tomato paste, mustard, tamari and thyme.
- Mix the ingredients together, then add the eggs and mix again until well combined.
- Press the turkey mixture into a 9 x 5-inch loaf pan.
- Cover the terrine with foil.
- Bake at 325u0b0 for 1 1/4 hours.
- Remove from oven and let cool for 1 hour.
- Place another 9 x 5-inch loaf pan on top of the terrine and fill with dried beans or other heavy material such as a can of food, or cover with foil and top with something heavy. Refrigerate 2 to 3 days.
