Stewed Eggplant With South African Braai Spices
- 1 whole Eggplant Peeled And Cut Into 1 Inch Cubes
- 1/4 cups Olive Oil
- 1 teaspoon Fresh Oregano, Chopped
- 1 teaspoon Fresh Thyme
- 1 Tablespoon Braai Spice Rub
- FOR THE BRAAI SPICE RUB:
- 1 teaspoon Kosher Salt
- 2 teaspoons Smoked Sweet Paprika
- 1 teaspoon Cumin
- 1/2 teaspoons Coriander
- 1 teaspoon Ground Black Pepper
- 1 teaspoon Brown Sugar
- 1/2 teaspoons Nutmeg
- 1 teaspoon All Spice
- 1/2 teaspoons Ground Cloves
- 1/2 teaspoons Garlic Powder
- 1 teaspoon Chili Powder
- Place eggplant in a bowl and sprinkle with salt to draw out excess moisture for about 30 minutes. Rinse in a colander with cold water and pat dry.
- Heat olive oil in saucepan on medium low heat. Add eggplant, oregano, thyme and spice rub. Cover and simmer over low heat, stirring frequently for 45-60 minutes.
- For the spice rub, simple mix ingredients well in a bowl.
