Cookie Butter Energy Bites
- 1/4 cups Honey
- 3/4 cups Cookie Butter, Slightly Melted
- 1 cup Old-fashioned Oats, Ground In Food Processor
- 1 Tablespoon Chia Seeds
- 1/2 teaspoons Cinnamon
- 12 Gingersnap Cookies, Crushed For Garnish
- Note dough requires inactive chill time of at least 1 hour.
- In a large bowl, combine the honey and cookie butter. Add oats, chia seeds and cinnamon. Stir well. Refrigerate mixture for 1-2 hours, or until firm, so it's easier to roll into balls.
- Remove from refrigerator and roll into small balls. Roll each bite into crushed gingersnaps, if desired. Enjoy!
- Notes:
- 1. Energy bites will hold their shape best if kept refrigerated. If bites start to fall apart, add more honey to mixture.
- 2. Cookie butter is a type of spiced shortbread (kind of like gingerbread) flavored spread. It's typically found in the nut butter aisle at your grocery store. You may have seen Biscoff; also Trader Joe's has their own brand.
