Apple Pie Bites

  1. Preheat oven to 400 degrees.
  2. Spray a mini-muffin pan with non-stick spray.
  3. Take biscuits and separate them. You can separate them into about 3 layers per biscuit. This is easier when the biscuits are cold, so keep them in the fridge before this step.
  4. Line each mini-muffin cup with a layer of biscuit. This is a little hard because the cups are greased, but you can do it!
  5. Finely dice apples. I recommend using tart apples like Granny Smith.
  6. Put butter and brown sugar in a bowl and microwave for about 20-30 seconds, until butter is mostly melted. Add cinnamon and vanilla (and a pinch of salt if you aren't using salter butter) and stir well.
  7. Put diced apples and walnuts into the bowl with the other ingredients and mix until they are well coated.
  8. Spoon the apple and nut mixture into the biscuit cups. Don't overfill!
  9. Cook for 8-12 minutes, or until the parts of the biscuit you can see are light brown.
  10. Serve warm with a dollop of Cool Whip!
  11. You can do this recipe with a lot of ingredients. The picture is actually pears, walnuts, and Craisins!
