Apple Pie Bites
- 1 can (16.3 Oz. Can) Pillsbury Grands! Jr. Biscuits
- 2 whole Apples
- 1/2 sticks Butter
- 1/3 cups Light Brown Sugar
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Vanilla
- 1/2 cups Finely Chopped Walnuts (optional)
- Preheat oven to 400 degrees.
- Spray a mini-muffin pan with non-stick spray.
- Take biscuits and separate them. You can separate them into about 3 layers per biscuit. This is easier when the biscuits are cold, so keep them in the fridge before this step.
- Line each mini-muffin cup with a layer of biscuit. This is a little hard because the cups are greased, but you can do it!
- Finely dice apples. I recommend using tart apples like Granny Smith.
- Put butter and brown sugar in a bowl and microwave for about 20-30 seconds, until butter is mostly melted. Add cinnamon and vanilla (and a pinch of salt if you aren't using salter butter) and stir well.
- Put diced apples and walnuts into the bowl with the other ingredients and mix until they are well coated.
- Spoon the apple and nut mixture into the biscuit cups. Don't overfill!
- Cook for 8-12 minutes, or until the parts of the biscuit you can see are light brown.
- Serve warm with a dollop of Cool Whip!
- You can do this recipe with a lot of ingredients. The picture is actually pears, walnuts, and Craisins!
