Sriracha Tomato And Spinach Scramble
- 1 whole Tomato
- 1 cup Spinach
- 2 whole Egg Whites
- 1 whole Egg
- 1/2 teaspoons Pepper
- 1/2 teaspoons Garlic Powder
- Sriracha, To Taste
- 1 pinch Salt
- 2 leaves Fresh Basil, Torn, For Garnish (optional)
- 1. Spray a pan with cooking spray and put over medium heat. Place tomatoes and spinach in the pan.
- 2. Beat egg whites and whole egg. When the spinach has wilted, pour the beaten eggs into the pan. Turn the heat down slightly. Sprinkle with the pepper and garlic powder. When the eggs set around the edge, pull away and tilt the pan so that the uncooked egg runs to the edge and gets cooked.
- 3. Add Sriracha. Mix all together. When eggs are set, put on a plate and sprinkle with salt. Top with torn basil (optional).
