Pasta With Mushrooms
- 1 can stewed tomatoes, drained
- 6 1/2 oz. linguine, broken in half (uncooked)
- 1 can chicken broth (undiluted)
- 3 1/2 oz. fresh mushrooms, thinly sliced or 1 can mushrooms, drained
- 1/2 c. chopped shallots
- 1 tsp. minced garlic
- 2 tsp. basil
- 1/2 tsp. ground pepper
- 1/2 c. red peppers, cut into thin strips
- 2 Tbsp. grated Parmesan cheese
- Drain tomatoes; set aside.
- Cook pasta according to directions, omitting salt.
- Drain and set aside.
- Place chicken broth in large skillet; bring to a boil.
- Add mushrooms, shallots and garlic. Cook uncovered over medium heat for 5 minutes.
- Add tomato, basil and ground pepper.
- Cook, covered, 10 minutes.
- Add reserved pasta, pepper strips and Parmesan cheese.
- Stir well.
- Cover and cook an additional 5 minutes or until thoroughly heated.
- Serve immediately.
