Compost Cookies
- 1-1/2 cup Softened, Unsalted Butter
- 3/4 cups Dark Brown Sugar
- 1/4 cups Granulated Sugar
- 2 Tablespoons Used Coffee Grounds
- 1 whole Egg
- 1 Tablespoon Vanilla
- 1 cup Oatmeal
- 1 cup Flour
- 3/4 cups Roughly Crushed Potato Chips
- 1/2 cups Roughly Crushed Pretzels
- 1/2 cups Roughly Crushed Fritos
- 1/2 cups Peanut Butter Chips
- 1/2 cups Chocolate Chips
- 1 teaspoon Baking Soda
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream together the butter, sugars and coffee grounds.
- In a small bowl, whisk together the egg and vanilla then add to the sugars, butter and coffee ground mixture.
- In a large mixing bowl mix together the, oatmeal, flour, potato chips, pretzels, Fritos, peanut butter chips, chocolate chips and baking soda.
- Slowly add the the dry ingredients to the wet mixture.
- Shape into balls about two tablespoonfuls each.
- Place the balls two inches apart on a Silpat- or parchment-lined cookie sheet and bake for 10-12 minutes. Cool for 2 minutes and then transfer to a cooling rack.
