Spinach Mandarin Orange & Gorgonzola Salad With Balsamic Vinaigrette
- 2 cups Baby Spinach
- 1/3 cups Mandarin Oranges, In Juice
- 1/8 Onion, Thinly Sliced
- 1 ounce, weight Gorgonzola Cheese, Crumbled
- 1/4 Red Pepper, Chopped
- 1 slice Bacon Crumbled
- Croutons (Optional)
- 1 Tablespoon Balsamic Vinegar
- 3 teaspoons Juice From Oranges
- 1 pinch Salt
- 1 pinch Pepper
- 3 teaspoons Extra Virgin Olive Oil
- Put baby spinach on a plate. Add mandarin oranges (saving some juice for the vinaigrette), sliced onions, crumbled gorgonzola cheese, chopped red pepper, crumbled bacon and croutons (if desired).
- To make the vinaigrette, pour "good" balsamic vinegar into a small bowl. Add juice from the oranges, salt and pepper. Whisk in extra virgin olive oil, and that's it. Drizzle it over your salad and enjoy!
