Fruit Salad Squares
- 1 large can crushed pineapple
- 1 small can mandarin oranges
- 1 c. syrup
- 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1 envelope unflavored gelatin
- 1/4 tsp. salt
- 1/2 c. orange juice
- 1/4 c. lemon juice
- 1 egg
- 2 c. mini marshmallows
- 1/2 c. nuts
- 2 c. whipped topping
- Drain fruits and reserve 1 cup syrup.
- Combine syrup in saucepan with sugar, cornstarch, gelatin, salt and orange and lemon juices.
- Cook until thickened and boil for 2 minutes.
- Add a small amount of this to beaten egg.
- Return to hot mixture and cook 1 minute longer.
- Cool to room temperature and fold in the fruits, marshmallows, nuts and topping.
- Use a 9 x 9-inch dish. Cool.
- Garnish with maraschino cherries.
- Cut in squares.
