Avial (Mixed Vegetable Stew With Coconut And Yogurt)
- 3 cups Water, Or As Desired
- 4 cups Mixed Sliced Vegetables (I Used Carrot, Pumpkin, Plantains, Yam, Beans, And Peas)
- 1/4 teaspoons Salt, Or To Taste
- 2 sprigs Curry Leaves, Divided
- 1 teaspoon Cumin Seeds
- 1/2 teaspoons Turmeric Powder
- 1 cup Grated Coconut
- 1 Dried Red Chili
- 1 Green Chili, Chopped
- 1/2 cups Yogurt
- 2 Tablespoons Coconut Oil
- Take a deep pan, add water (use less for a thick gravy), sliced vegetables, salt, half of curry leaves and cumin seeds. Cook for 10-15 minutes over medium flame.
- Add turmeric powder, grated coconut and chilies. Cook for 5-8 minutes.
- Reduce the flame to low-medium and add yogurt. Simmer for 5 minutes.
- Finish by adding rest of the curry leaves and coconut oil. Mix well and serve hot with rice.
