Apple Oat Bran Muffins
- 1 1/4 c. whole wheat flour
- 1 c. oat bran
- 1/3 c. packed brown sugar
- 2 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cinnamon
- 1 c. buttermilk
- 2 egg whites
- 2 Tbsp. cooking oil
- 3/4 c. peeled, shredded apple
- In medium bowl stir together first 8 ingredients.
- In a small bowl combine milk, egg whites and oil.
- Add to dry ingredients, stir just until moist.
- Stir in apple.
- Spray muffin cups with nonstick spray coating.
- Spoon about 1/4 cup batter into each muffin cup.
- Bake at 375u0b0 for 18 to 20 minutes or until inserted toothpick comes out clean.
- Makes 12 muffins.
- May store batter, tightly covered, in refrigerator for up to 5 days.
