Lime Breakfast Muffins
- 1-3/4 cup All-purpose Flour
- 1 cup Sugar, Divided
- 1/2 Tablespoons Lime Zest
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/4 teaspoons Salt
- 1 whole Egg
- 1 cup Sour Cream
- 6 Tablespoons Butter, Melted
- 1 Tablespoon Fresh Lime Juice
- Preheat oven 400 degrees. In a large bowl, stir together flour, 3/4 cup of the sugar, lime zest, baking powder, baking soda and salt. In a small bowl, add melted butter, sour cream, egg, and lime juice and stir together until well combined. Stir wet ingredients into dry until just mixed. Fill a greased muffin tin half full and sprinkle each one with about 1/2 teaspoon of remaining sugar. Bake for 15 - 20 minutes. Remove from the pan and cool slightly.
