Lime Breakfast Muffins

  1. Preheat oven 400 degrees. In a large bowl, stir together flour, 3/4 cup of the sugar, lime zest, baking powder, baking soda and salt. In a small bowl, add melted butter, sour cream, egg, and lime juice and stir together until well combined. Stir wet ingredients into dry until just mixed. Fill a greased muffin tin half full and sprinkle each one with about 1/2 teaspoon of remaining sugar. Bake for 15 - 20 minutes. Remove from the pan and cool slightly.
  2. Yields 15 muffins.
