Spicy French Onion Soup
- 2 whole Onions
- 1 clove Garlic
- 1 Tablespoon Olive Oil
- 2 Tablespoons Butter
- 4 cups Beef Broth
- 1 whole Lemon, Juiced
- Salt And Pepper, to taste
- Seasoned Croutons
- Pepper Jack Cheese
- 1. Peel, then slice onions into thin strips.
- 2. Chop garlic until finely minced.
- 3. Heat oil and butter in a medium sized pan over medium heat. Once they are hot add onions and garlic.
- 4. Cook onions and garlic until onions just start to brown.
- 5. Add beef broth, lemon juice and salt and pepper.
- 6. Bring to a boil, then reduce heat and continue to cook for 20 minutes or until onions are cooked through.
- 7. Ladle soup into four oven-safe soup mugs.
- 8. Top with croutons followed by pepper jack cheese and put the mugs under the broiler until cheese is bubbly and starting to brown.
