Almond, Fig & Cacao Cookies
- 2 cups Almond Flour
- 1 cup Rolled Oats
- 1 teaspoon Baking Soda
- 1/2 cups Cacao Chips, Chopped
- 3 whole Fresh Figs, Chopped Into Small Pieces
- 1/3 cups Coconut Oil
- 1/4 cups Honey
- 3 Tablespoons Almond Milk
- 1. Preheat oven to 180 C or 356 F.
- 2. Add almond flour, oats and baking soda into a large mixing bowl.
- 3. Add chopped figs into the mixing bowl.
- 4. If your cacoa chips are not already in bite sizes pieces, chop them then add them into the mixing bowl.
- 5. Melt the coconut oil and honey in a small saucepan over a very low heat for a couple of minutes. Add the mixture to the dry ingredients and stir well.
- 6. Add almond milk and stir until everything is well mixed.
- 7. Shape mixture into your preferred cookie-sized balls. Place them on a parchment-lined or lightly greased baking sheet, leaving about 2 inches in between them. Then flatten them down with the back of a spoon.
- 8. Bake for 20 minutes or until golden.
