Pear Almond Steel Cut Baked Oatmeal
- 1 cup Quick Cooking Steel Cut Oats (I Used Bob's Red Mill)
- 1/3 cups Slivered Almonds
- 1 teaspoon Cinnamon
- 1/4 teaspoons Cardamom
- 1/4 teaspoons Kosher Salt
- 1-1/4 teaspoon Baking Powder
- 2-1/3 cups Unsweetened Vanilla Almond Milk (or Milk Of Choice)
- 1/2 teaspoons Almond Extract
- 1/2 teaspoons Vanilla Extract
- 1/4 cups Honey
- 1 whole Egg
- 2 whole Pears, Peeled, Cored And Diced
- Preheat oven to 375 F and spray a 9x9 baking dish with cooking spray.
- In a large bowl whisk together the oats, almonds, cinnamon, cardamom, salt and baking powder.
- In a separate bowl whisk together the almond milk, extracts, honey and egg. Pour the wet ingredients into the dry and stir together. Stir in the diced pears.
- Pour the oatmeal mixture into the prepared baking dish and place on the middle rack of the oven. Bake for 50-60 minutes or until the oatmeal is golden and set. Serve immediately.
