Peaches And Cream Cheesecake
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3 1/4 oz. dry vanilla pudding mix (not instant)
- 3 Tbsp. soft butter
- 1 egg
- 1/2 c. milk
- 1 (15 to 20 oz.) can peaches
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. sugar
- 3 Tbsp. reserved juice
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
- Preheat oven to 350u0b0.
- Grease a 9-inch pie plate.
- Combine first 7 ingredients, beat 2 minutes on medium speed; pour into greased pie plate or pan.
- Place drained peaches over batter. Combine cream cheese, sugar and juice; beat 2 minutes on medium speed.
- Spoon over prepared pan within 1 inch of edge of pan. Sprinkle sugar and cinnamon over top and bake 30 to 35 minutes until crust is golden brown.
- Filling will appear soft.
- Store in refrigerator.
