Ironman Cookies
- 1 1/2 c. unsifted all-purpose flour (stir to lightly aerate before measuring)*
- 2 tsp. double-acting baking powder
- 1 tsp. salt
- 1/2 lb. (2 sticks) sweet or unsweetened butter
- 1 1/2 tsp. vanilla extract
- 1 c. granulated sugar
- 2/3 c. dark or light brown sugar, firmly packed
- 2 eggs (large or extra large)
- 1/2 c. quick oatmeal (not instant)
- 1 1/2 c. untoasted or toasted wheat germ**
- 1 1/3 c. shredded coconut, loosely packed
- 12 oz. pkg. semisweet chocolate morsels
- 2 c. chopped walnuts or pecans
- Preheat oven to 350u0b0.
- Sift/stir together flour, baking powder, and salt.
- Set-aside.
- In the large bowl of an electric mixer, cream the butter.
- Beat in the vanilla and sugars.
- Add the eggs and beat well.
- On low speed, add the sifted dry ingredients, scraping the bowl and beating only until mixed.
- Mix in the oatmeal, wheat germ and coconut.
- Then add the chocolate chips and the nuts.
