Guacamole Salad
- 2 whole Avocados, Peeled And Cut Into 1/2-inch Pieces
- 1 pint Grape Tomatoes, Halved, Or 2 Large Tomatoes Cut Into 1/2-inch Pieces
- 1 whole Yellow Bell Pepper, Cut Into 1/2-inch Pieces
- 1/2 whole Red Onion (small Chop)
- 1 whole Jalapeno, Seeded And Minced
- 1 whole Lime, Zest And Juice
- 1/4 cups Olive Oil
- 1/2 Tablespoons Tabasco
- Salt And Pepper, to taste
- Garlic Powder, To Taste
- 1/2 bunches Cilantro, Minced
- 1) Combine tomatoes, bell pepper, onion, jalapeno and lime zest in a large salad bowl.
- 2) Whisk together lime juice, olive oil, Tabasco, salt, pepper, garlic powder, and chopped cilantro. (Taste and add more lime/tobasco/salt/garlic powder as needed.)
- 3) Dress the vegetables and toss to coat. Add avocados at the end and fold in lightly.
- This is also tasty with added drained and rinsed black beans!
