Heavenly Irish Brownies
- FOR THE BROWNIES:
- 1/2 cups Butter
- 1 cup Sugar
- 4 whole Eggs
- 1 teaspoon Vanilla
- 16 ounces, fluid Hershey's Chocolate Syrup
- 1 cup Flour
- 1/2 teaspoons Salt

- FOR THE MINT FILLING:
- 1/2 cups Butter
- 2 cups Confectioners Sugar
- 1 Tablespoon Water
- 1/2 teaspoons Mint Extract
- 3 drops Green Food Coloring

- FOR THE FROSTING:
- 9 Tablespoons Butter
- 1 bag (about 12 Oz. Bag) Mint Chocolate Chips Or Milk Chocolate Chips With A Teaspoon Or So Of Peppermint Extract
- Brownies: cream 1/2 cup butter and sugar, add eggs one at a time. Add vanilla and chocolate syrup. Mix in flour and salt, beat for 3 minutes.
- Pour into a 13x9" pan (grease it or use parchment paper). Bake at 350 degrees for 30 minutes. COOL COMPLETELY.
- Mint filling:
- Cream 1/2 cup butter; add powdered sugar, water, mint extract and food coloring. Beat until creamy. Spread over the brownies and chill in the fridge for at least an hour.
- Mint chocolate frosting:
- Melt 9 tablespoons butter and chocolate chips in a saucepan. (I used 1/2 bag of green mint chocolate chips and 1/2 bag Hershey's milk chocolate chips.) Pour melted chocolate over the filling. Cover and chill overnight (or in the freezer for a few hours if you are in a hurry!)
- These bars are incredibly rich and sweet and minty, so I cut them pretty small. I usually get 60 bars to a pan!
