Heavenly Irish Brownies

  1. Brownies: cream 1/2 cup butter and sugar, add eggs one at a time. Add vanilla and chocolate syrup. Mix in flour and salt, beat for 3 minutes.
  2. Pour into a 13x9" pan (grease it or use parchment paper). Bake at 350 degrees for 30 minutes. COOL COMPLETELY.
  3. Mint filling:
  4. Cream 1/2 cup butter; add powdered sugar, water, mint extract and food coloring. Beat until creamy. Spread over the brownies and chill in the fridge for at least an hour.
  5. Mint chocolate frosting:
  6. Melt 9 tablespoons butter and chocolate chips in a saucepan. (I used 1/2 bag of green mint chocolate chips and 1/2 bag Hershey's milk chocolate chips.) Pour melted chocolate over the filling. Cover and chill overnight (or in the freezer for a few hours if you are in a hurry!)
  7. These bars are incredibly rich and sweet and minty, so I cut them pretty small. I usually get 60 bars to a pan!
