Sweet And Sour Pork Chops
- 6 pork chops
- 1/2 c. lemon juice
- 1/2 c. packed brown sugar
- 1 Tbsp. soy sauce
- 1 (20 oz.) can pineapple chunks
- hot cooked rice
- vegetable oil
- 3 Tbsp. cornstarch
- 1/4 c. chopped onion
- 1 tsp. chicken flavored bouillon or 1 cube
- 1 c. thinly sliced carrots
- Preheat oven to 350u0b0.
- In large skillet, brown chops in oil. Remove chops from pan.
- Pour off fat.
- In same skillet, combine lemon juice and cornstarch; mix well.
- Add sugar, onion, soy sauce, bouillon and reserved pineapple juice; cook and stir until slightly thickened and bouillon is dissolved.
- Add pork chops and carrots. Cover and bake 45 minutes or until tender.
- Add pineapple, cover and bake 15 minutes longer.
- Serve over rice.
- Garnish with green pepper, if desired.
