Banana Bread With Praline Icing

  1. For the bread:
  2. Preheat the oven to 350 F.
  3. Prepare two bowls: one with the all the dry ingredients and one with the wet.
  4. Stir each mix, then blend them together. Pour into a greased and floured standard size loaf pan.
  5. Bake for around 1 hour and 20 minutes for a large loaf, or 40-45 minutes for smaller loaf pans.
  6. When done baking, remove from the pan and place on a cooling rack.
  7. For the icing:
  8. Place brown sugar, 1 1/2 tablespoons milk, butter, corn syrup, and a dash of salt in a saucepan over medium heat. Bring to a boil, remembering to stir occasionally. Scrape brown sugar mixture into a bowl. Add the vanilla extract, remaining 1 1/2 tablespoons milk and powdered sugar. Beat with a mixer at high speed until slightly cooled. Drizzle icing over the cooled banana bread and sprinkle with the chopped pecans.
  9. Let the bread stand until the icing sets, then slice and serve!
