Vegan Chocolate Chip Cookies
- 1 cup Coconut Oil
- 1/2 cups Sugar
- 1/2 cups Packed Brown Sugar
- 2 Tablespoons Ground Flax Seed
- 2 Tablespoons Water
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 teaspoon Vanilla Extract
- 2 cups Flour
- 3/4 cups Mini Chocolate Chips (Enjoy Life Brand Is Vegan-friendly) Or Carob Chips
- 3 Tablespoons Water
- Preheat oven to 375 F. In a mixing bowl, cream together coconut oil and sugars.
- In a small bowl mix together ground flax seed and water to make a paste. Add this into the coconut oil and sugar mixture along with the baking soda, salt and vanilla. Mix to combine.
- Mix in flour and chocolate chips. Add small amounts of water (up to the listed amount) until dough comes together and isn't crumbly.
- Drop dough by tablespoonfuls onto greased cookie sheets, placing them 2" apart. Bake for 12-15 minutes or until lightly browned. Transfer to wire rack to cool.
