Spiced Oatmeal Cookies
- 1/2 cups Shortening
- 1/2 cups Unsalted Butter, Softened
- 1 cup Granulated Sugar
- 1 cup Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1-1/2 cup Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1/2 teaspoons Ground Cinnamon
- 1/2 teaspoons Ground Cloves
- 1/2 teaspoons Dried Ground Ginger
- 1/2 teaspoons Ground Allspice
- 1/2 teaspoons Ground Nutmeg
- 3 cups Dry Quick-cooking Oatmeal
- With a mixer, cream the shortening, butter, granulated sugar, and brown sugar. Add in the eggs and vanilla and beat well.
- In a separate bowl, whisk the flour, salt, baking soda, cinnamon, cloves, ginger, allspice, and nutmeg.
- Stir dry ingredients into wet mixture, until just combined. Fold in the oatmeal.
- You could also add any or all of the following: raisins, chocolate chips, nuts, dried cranberries, etc. Use your imagination!
- Mix well. Spoon onto a greased cookie sheet or parchment paper and bake at 350u0b0F for 10 minutes.
