Banana Cupcakes With Peanut Butter Frosting
- 1-1/2 cup Sugar
- 1 stick Butter (unsalted And Softened)
- 2 whole Eggs
- 1-1/2 teaspoon Vanilla Extract
- 2 cups All-purpose Flour
- 1/4 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 cup Buttermilk, Or Vinegar Soured Milk
- 1-1/4 cup Mashed Ripe Banana

- FOR THE FROSTING:
- 2 cups Powdered Sugar
- 1 stick Butter (unsalted And Softened)
- 1 teaspoon Vanilla Extract
- 1 cup Creamy Peanut Butter
- 3 Tablespoons Milk
- 1. Preheat oven to 350 degrees Fahrenheit and line a cupcake pan with wrappers.
- 2. Cream butter and sugar together until fluffy.
- 3. Add eggs and vanilla. Mix until smooth.
- 4. In a separate bowl, combine all the dry ingredients.
- 5. Alternate adding the dry ingredients and buttermilk into the egg and butter mixture and mix until well combined.
- 6. Gently fold mashed bananas into the batter.
- 7. Scoop batter into the muffin cups until almost full.
- 8. Bake for 25 minutes and then let cool.
- To make the frosting:
- 1. Combine powdered sugar, butter, vanilla, peanut butter and milk.
- 2. Mix until spreadable and frost cooled cupcakes.
- Eat while dancing around and singing your favorite Elvis song.
