Beef Taco Pie
- 1 lb. ground beef
- 3/4 c. biscuit mix
- 3 eggs
- 1/2 c. chopped onion
- 1 envelope taco seasoning
- 2 tomatoes, sliced and diced
- 1/2 c. sour cream
- 1 (4 oz.) can green chile, drained and chopped
- shredded lettuce
- 1 c. shredded cheese (Cheddar or Monterey Jack)
- 1/4 c. milk
- Heat oven to 400u0b0.
- Grease 10 x 1 1/2-inch pie pan.
- Cook beef and onion until brown; drain.
- Stir in taco seasoning and pour into pie pan.
- Sprinkle with chiles.
- In another bowl, beat with hand mixer the milk, biscuit mix and eggs for 1 minute until smooth. Pour over beef mixture and bake 25 minutes.
- Remove and top with diced tomatoes.
- Sprinkle with cheese and continue baking for 8 to 10 minutes.
- Cool 5 minutes.
- Serve with sour cream.
