One Pot Chicken Taco Soup
- 1 pound Ground Chicken (Or Sub Ground Turkey/Lean Ground Beef)
- 2-1/2 cups Chicken Broth, Divided
- 1 clove Garlic, Minced
- 1/2 whole Onion, Diced
- 1 can (28 Oz. Size) Diced Tomatoes
- 1 can (15 Oz. Size) Cannellini Beans Or Kidney Beans, Rinsed And Drained
- 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
- 10 ounces, weight Corn, Fresh Or Frozen
- 1 whole Bell Pepper (stem And Seeds Removed, Chopped, Any Color)
- 1 package (1 Oz. Size) Taco Seasoning, Low Sodium (see Note)
- Toppings: Avocado, Shredded Cheese, Sour Cream And Tortilla Strips
- Spray a large pot or Dutch oven with cooking spray and heat over medium heat. Add ground chicken and 1/2 cup of the chicken broth. Cook until chicken is no longer pink (approximately 6-7 minutes). Add in garlic and onion, and cook until fragrant, about 2-3 minutes.
- Add remaining 2 cups of chicken broth, tomatoes, beans, corn, bell pepper, and seasonings. Simmer for 20-30 minutes.
- Top with your choice of fresh avocado, shredded cheese, sour cream or tortilla strips.
- Note: If you want to make your own taco seasoning instead of using the packet of store bought, you can use: 1 tablespoon chili powder, 1 teaspoon garlic powder, 1 teaspoon black pepper, 1 teaspoon cumin, 1 teaspoon salt, 1/2 teaspoon paprika and 1/4 teaspoon onion powder.
