Kale And Red Pepper Fried Rice
- 2-1/2 Tablespoons Sesame Oil
- 2 cloves Garlic, Minced
- 2 cups Cooked Jasmine Rice (very Dry Or A Few Days Old)
- 1/4 cups Chopped Sweet Red Pepper Or Red Bell Pepper
- 1 whole Small Onion, Chopped
- 2-1/2 cups Chopped Kale
- 1 whole Egg
- 1/8 cups Soy Sauce
- Heat a large skillet or wok to medium-high heat. Heat 2 tablespoons of the oil in the skillet and add minced garlic. Stir garlic for approximately 30 seconds or until fragrant. Add rice to the skillet and do not stir. Let it cook for approximately 1-2 minutes until it begins to lightly brown.
- Stir rice, add red pepper and onion and let it cook another minute. Rice should be lightly browned at this point.
- Add kale, stirring as you go. Kale will shrink up a lot as it cooks. Cook for about 30 seconds.
- Push rice to one side of the skillet and add the last 1/2 tablespoon of oil to skillet. Crack egg directly into skillet and scramble it until it solidifies. Mix egg into fried rice and add soy sauce. Serve!
