Popeye Rice
- 1 cup Long Grain White Rice
- 3 Tablespoons Butter, Divided
- 1 can (14.5 Oz) Chicken Broth
- 1 teaspoon Salt
- 1 teaspoon Mrs. Dash Seasoning Blend
- 1/2 cups Diced Onion
- 1 cup Frozen Spinach, Thawed
- 1/2 cups Swiss Cheese, Shredded
- In a medium size pot, melt 1 tablespoon butter and add the rice. Cook for 2 minutes, and then add chicken broth, salt and Mrs. Dash seasoning. Bring to a boil, then turn down to a simmer and cover. Allow rice to cook for about 15 minutes, undisturbed.
- Meanwhile, in a small pan add remaining 2 tablespoons butter and onion, stirring occasionally. Cook onions until they just start to brown. Squeeze excess water out of spinach and add to onions. Cook 2 minutes stirring frequently. When rice is cooked, stir in the spinach and onion mixture and the Swiss cheese, stirring until well combined. Yummy goodness.
