Popeye Rice

  1. In a medium size pot, melt 1 tablespoon butter and add the rice. Cook for 2 minutes, and then add chicken broth, salt and Mrs. Dash seasoning. Bring to a boil, then turn down to a simmer and cover. Allow rice to cook for about 15 minutes, undisturbed.
  2. Meanwhile, in a small pan add remaining 2 tablespoons butter and onion, stirring occasionally. Cook onions until they just start to brown. Squeeze excess water out of spinach and add to onions. Cook 2 minutes stirring frequently. When rice is cooked, stir in the spinach and onion mixture and the Swiss cheese, stirring until well combined. Yummy goodness.
