Healthy And Delicious Banana Bread/Muffins
- 2-1/2 cups Whole Wheat Flour
- 2 whole Eggs
- 2/3 cups Plain Or Vanilla Yogurt
- 1/3 cups Canola Or Vegetable Oil
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Mashed Ripe Bananas
- 1 teaspoon Baking Soda
- 1-1/4 cup Brown Sugar
- Preheat oven to 350 degrees.
- In a large mixing bowl, stir eggs, yogurt, oil, vanilla extract, bananas, baking soda and brown sugar until just combined. Slowly add the flour while mixing slowly. Pour the batter into a pre-sprayed muffin pan or loaf pan. If making muffins, bake them for 20-25 minutes or until a toothpick comes out clean. If making bread, bake for 50-60 minutes or until a toothpick comes out clean. Serve warm with soft butter! Makes approximately 15 muffins or one banana loaf.
