Peanut Butter White Chocolate Chip Cookies (Gluten-Free)

  1. Preheat the oven to 350 F.
  2. In a medium bowl, whisk all the ingredients together, except the white chocolate chips. When all the ingredients are combined, add the white chocolate chips and mix well.
  3. Scoop out 1 tablespoon of the batter onto a tray that you've lined with a silicone mat or parchment paper. Repeat with the rest of the dough, spacing them about 2 inches apart.
  4. Bake for 9 minutes then remove the tray from the oven and set it on a rack. Let them cool completely before you remove them from the baking sheet, otherwise the cookies may break apart.
  5. Makes 22 cookies.
