Southwestern Salad With Chipotle Lime Grilled Chicken
- 10 cups Romaine, Torn
- 1 can Black Beans, Rinsed And Drained
- 1-1/2 cup Cherry Tomatoes ( Or Whatever You Have )
- 1/2 cups Caesar Salad Dressing (I Use Ken's Tableside Caesar)
- 2 teaspoons Chili Powder
- 1/2 teaspoons Ground Cumin
- 2 Tablespoons Fresh, Snipped Cilantro
- 1/2 cups Tortilla Chips, Broken
- Chicken Breasts
- 1 bottle KC MASTERPIECE CHIPOTLE LIME MARINADE
- For the salad :
- 1. In large bowl, combine romaine, black beans, tomatoes, and cooked chicken. Toss it all together. (I made the salad and served the chicken on the side.)
- 2. For the dressing,whisk salad dressing, chili powder, and cumin. Pour over salad. Toss to coat.
- Sprinkle with cilantro and tortilla chips.
- For the chicken, just marinate the chicken breasts in KC Masterpiece Chipotle Lime Marinade for a few hours, and grill.
- Slice and serve on the side, or on top of the salad.
