Southwestern Salad With Homemade Catalina Dressing
- FOR THE DRESSING:
- 1/2 cups Extra Virgin Olive Oil
- 1/4 cups Ketchup
- 1/4 cups Red Wine Vinegar
- 1/4 cups Sugar
- 1/2 teaspoons Onion Powder
- 1/2 teaspoons Paprika
- 1/4 teaspoons Worcestershire Sauce
- FOR THE SALAD:
- 1 pound Ground Beef
- Salt And Pepper, to taste
- 14-1/2 ounces, weight Canned Pinto Beans Rinsed And Drained
- 1 whole Head Romaine Lettuce
- 1 whole Tomato, Largely Diced
- 3/4 cups Freshly Grated Cheddar Cheese
- 3-3/8 ounces, weight Bag Nacho Cheese Doritos
- To make dressing, combine all ingredients and mix well.
- To make salad, start by browning the ground beef in a skillet. Season with salt and pepper. Add beef to rinsed pinto beans in colander and drain. Wash and dry lettuce. Tear lettuce into pieces and top with beef, beans, tomatoes, and cheese. Crush up some Doritos and sprinkle on top. Top with dressing.
