Baked Squash Surprise(Serves 8 To 10)
- 1 1/2 lb. fresh squash or 2 (16 oz.) cans squash
- salt and pepper to taste
- 1 small chopped pimento
- 1 medium onion, chopped fine
- 1 c. sour cream
- 1 c. cream of chicken soup
- 4 small grated carrots
- 1 pkg. cornbread or herb stuffing
- 3/4 c. oleo, melted
- Cook squash in small amount of water until tender.
- Drain and mash.
- Season to taste.
- Stir in remaining ingredients.
- Mix stuffing and oleo.
- Reserve half stuffing.
- Put balance of stuffing in squash mixture.
- Line large casserole with reserved stuffing.
- Pour in squash mixture.
- Add balance of stuffing on top.
- Bake 30 minutes at 350u0b0.
- May prepare the day before.
- Bake when needed.
- Freeze well.
