Polenta And Peaches Bake

  1. Preheat oven to 350 F.
  2. Put the unwrapped roll of polenta into a microwave-safe bowl and heat for 1-2 minutes, until soft. Remove bowl from the microwave. Add the milk and mash the polenta until it resembles mashed potatoes. Spread it into a 9" x 13" baking dish in a thin, even layer.
  3. Place the peaches on top of the polenta.
  4. In a small bowl, combine the butter, honey and cinnamon. Evenly brush the mixture over the peaches.
  5. Bake for 25 minutes, until peaches are soft and polenta is heated through.
