Polenta And Peaches Bake
- 1 pound Prepared Rolled Polenta
- 1/2 cups Vanilla Almond Milk (or Milk Of Preference)
- 4 whole Ripe Peaches, Pitted And Sliced
- 1 Tablespoon Butter, Melted
- 2 Tablespoons Honey
- 2 teaspoons Cinnamon
- Preheat oven to 350 F.
- Put the unwrapped roll of polenta into a microwave-safe bowl and heat for 1-2 minutes, until soft. Remove bowl from the microwave. Add the milk and mash the polenta until it resembles mashed potatoes. Spread it into a 9" x 13" baking dish in a thin, even layer.
- Place the peaches on top of the polenta.
- In a small bowl, combine the butter, honey and cinnamon. Evenly brush the mixture over the peaches.
- Bake for 25 minutes, until peaches are soft and polenta is heated through.
