South African Malva Pudding
- FOR THE PUDDING:
- 2 Tablespoons Unsalted Butter
- 1 cup Sugar
- 2 Tablespoons Smooth Apricot Jam
- 2 teaspoons White Wine Vinegar
- 2 cups Flour
- 2 cups Milk
- 2 whole Eggs
- 2 teaspoons Baking Soda
- 1 pinch Salt
- Whipped Cream, To Serve
- FOR THE SAUCE:
- 1 cup Whipping Cream
- 1/2 cups Butter
- 1/2 cups Brown Sugar
- 1/2 cups Water
- 2 teaspoons Molasses
- 1/2 teaspoons Vanilla
- For the pudding:
- Preheat oven to 350 F.
- Put the butter, sugar, apricot jam and vinegar in a large saucepan over medium heat. Stir and heat until the sugar has dissolved and the mixture is smooth. Remove from heat and allow to cool.
- Sift the flour into a small bowl. Alternate adding the flour and the milk into the jam mixture. Stir each time until the mixture is smooth and thick. Add 1 beaten egg at a time and blend well. Add the baking soda and salt. Blend well.
- Pour the mixture into a greased 9x13 baking dish and bake at 350 F for 30-45 minutes or until a toothpick comes out clean from the middle of the pudding.
- For the sauce:
- Heat all of the sauce ingredients in a saucepan set over medium heat. Stir and allow the mixture to come to a simmer. Remove from the heat.
- Pierce the top of the pudding several times with a fork-to allow the sauce to drain into it. Pour the sauce over the hot pudding.
- Serve with custard or whipped cream.
