South African Malva Pudding

  1. For the pudding:
  2. Preheat oven to 350 F.
  3. Put the butter, sugar, apricot jam and vinegar in a large saucepan over medium heat. Stir and heat until the sugar has dissolved and the mixture is smooth. Remove from heat and allow to cool.
  4. Sift the flour into a small bowl. Alternate adding the flour and the milk into the jam mixture. Stir each time until the mixture is smooth and thick. Add 1 beaten egg at a time and blend well. Add the baking soda and salt. Blend well.
  5. Pour the mixture into a greased 9x13 baking dish and bake at 350 F for 30-45 minutes or until a toothpick comes out clean from the middle of the pudding.
  6. For the sauce:
  7. Heat all of the sauce ingredients in a saucepan set over medium heat. Stir and allow the mixture to come to a simmer. Remove from the heat.
  8. Pierce the top of the pudding several times with a fork-to allow the sauce to drain into it. Pour the sauce over the hot pudding.
  9. Serve with custard or whipped cream.
