Cold Penne Pasta & Plum-Cucumber Salsa
- 1 package (8 Oz. Size) Penne Pasta
- 2 Tablespoons Butter
- 1 teaspoon Fresh Chopped Parsle
- 2 whole Ripe Purple Or Red Plums, Pitted, Diced
- 1 whole English Cucumber Or Regular Cucumber, Peeled, Diced
- 1 whole Small White Onion (diced Finely)
- 2 leaves Fresh Mint, Chopped
- 3 Tablespoons Olive Oil
- 2 Tablespoons Vinegar (your Choice)
- 1/4 teaspoons Salt
- 1/4 teaspoons Black Pepper
- 1 whole Lemon (for Zest And Juice)
- 1 cup Blue Cheese Crumbles (optional)
- In a boiling pot of water add pasta. Salt and cook per instructions then drain and add pasta into a large bowl. Add butter and parsley, stir and set aside.
- In another mixing bowl add diced plums, cucumbers, onion, fresh mint, olive oil, vinegar, salt and pepper to taste, lemon zest and lemon juice. Stir well. Add blue cheese crumbles (optional). Add the drained penne pasta and mix together well.
- Cover with plastic wrap and refrigerate 1 hour before serving. Serve cold. It is just delicious. Enjoy!
