Ice Cream Sandwiches
- 3 whole Eggs
- 3/4 cups Sugar
- 1 Tablespoon Coffee, Brewed
- 1/2 cups Butter, Melted
- 1/3 cups Cocoa Powder
- 1-3/4 cup All-purpose Flour
- 2 teaspoons Baking Powder
- 2 quarts Vanilla Ice Cream
- 10 jars Peanut Butter, Or To Taste
- 10 Tablespoons Chocolate Ice Cream Topping, Or To Taste (See Note For Instructions On How To Make Your Own)
- In a mixing bowl, beat the eggs and sugar. Add in coffee, melted butter, and cocoa powder, until well combined. Add flour and baking powder. Drop by spoonfuls onto a pizzelle iron and cook until crisp. Cool on a wire rack.
- Sandwich assembly: Spread about a tablespoon of peanut butter carefully over one side of a cookie and about one tablespoon of chocolate sauce over one side of another cookie. Spread a big scoop of softened ice cream over the peanut butter side of the cookie, carefully. Top with a chocolate-coated cookie. Wrap in plastic wrap or foil and place in the freezer until ready to serve. Repeat with remaining cookies.
- I made ten ice cream sandwiches. I broke a few cookies and we ate a few of the cookies.
- Note: if you don't have ice cream topping (like me, I never remember to buy any!), make some really quick by microwaving 1 cup chocolate chips and 1/2 cup of milk in 30-second intervals. In my microwave, it took 1 minute total. And you have chocolate sauce!
- If you aren't as big of a peanut butter fan as my clan is, you could always use caramel! I may have to try that. Would it be too much to add it with the peanut butter? Surely not!
