Goat Cheese Ice Cream

  1. 1. Mix the goat cheese and the milk untill you have reached a smooth creme-like texture.
  2. 2. Whisk the egg whites untill they are stiff and add the caster sugar.
  3. 3. Mix the egg white mixture with the goat cheese mixture untill it is well combined and stiff.
  4. 4. Then add the mixture to an icemaker and follow the instructions. Or add the mixture to a plastic tray and leave it to set for 4 hours in the freezer.
  5. 5. Serve 1 or 2 scoops per person with some raspberries or strawberries and a sprig of mint.
