Goat Cheese Ice Cream
- 1 pound, 5-1/4 ounces, weight Fresh Goat Cheese
- 3 cups, 2 tablespoons, 2 teaspoons, 2-5/8 pinches Full Fat Milk
- 7 ounces, weight Caster Sugar
- 4 whole Egg Whites
- 3 whole Raspberries Or Strawberries Per Person
- 1 bunch Mint, For Garnish
- 1. Mix the goat cheese and the milk untill you have reached a smooth creme-like texture.
- 2. Whisk the egg whites untill they are stiff and add the caster sugar.
- 3. Mix the egg white mixture with the goat cheese mixture untill it is well combined and stiff.
- 4. Then add the mixture to an icemaker and follow the instructions. Or add the mixture to a plastic tray and leave it to set for 4 hours in the freezer.
- 5. Serve 1 or 2 scoops per person with some raspberries or strawberries and a sprig of mint.
