Cherry Chocolate Chunk Muffins
- 2 cups All-purpose Flour
- 2-1/2 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/3 cups Sugar
- 6 Tablespoons Butter, Melted
- 2 whole Eggs
- 1/4 teaspoons Vanilla Extract
- 1 cup Non-fat Milk
- 1 cup Cherries, Frozen, Cut In Half Or Quarters
- 1/2 cups Dark Chocolate Chips
- 2 Tablespoons Coarse Sugar
- Preheat oven to 375u0b0F. Line 2 standard muffin tins with muffin liners or spray with cooking spray.
- In a medium bowl, add flour, baking powder, baking soda, and salt. Set aside.
- In large bowl add sugar, butter, eggs and vanilla; mix until combined. Pour in the milk; mix until combined. Slowly incorporate flour mixture just until moist. With a spatula, fold in cherries and chocolate chips.
- Evenly spoon batter into prepared muffin pan. Sprinkle with coarse sugar. Bake for 15 - 20 minutes or until a toothpick inserted in the center comes out clean.
