Cherry Oatmeal Muffins

  1. 1. Preheat oven to 375 degrees. Grease or line 18 standard muffin cups.
  2. 2. Mix the dry ingredients (flours, oats, flax meal, baking powder, baking soda, salt, cinnamon) in a large bowl.
  3. 3. Mix wet ingredients (applesauce, buttermilk, sugar, coconut oil, egg) in a medium bowl.
  4. 4. Add applesauce mixture to flour mixture. Stir until just moist.
  5. 5. Fold in cherries.
  6. 6. Fill muffin cups 2/3 full. Bake for 20 minutes, or until center tests done, turning the pans after 15 minutes.
