Cherry Oatmeal Muffins
- 3/4 cups Dark Spelt Flour
- 1/2 cups Light Spelt Flour
- 1-1/4 cup Quick Cooking Oats
- 1/2 cups Flax Meal
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 teaspoon Cinnamon
- 1 cup Unsweetened Applesauce
- 1/2 cups Buttermilk
- 1/2 cups Packed Brown Sugar
- 2 Tablespoons Coconut Oil
- 1 whole Large Egg (slightly Beaten)
- 1 can (14 To 16 Oz. Can) Cherries In Pear Juice, Well Drained And Chopped
- 1. Preheat oven to 375 degrees. Grease or line 18 standard muffin cups.
- 2. Mix the dry ingredients (flours, oats, flax meal, baking powder, baking soda, salt, cinnamon) in a large bowl.
- 3. Mix wet ingredients (applesauce, buttermilk, sugar, coconut oil, egg) in a medium bowl.
- 4. Add applesauce mixture to flour mixture. Stir until just moist.
- 5. Fold in cherries.
- 6. Fill muffin cups 2/3 full. Bake for 20 minutes, or until center tests done, turning the pans after 15 minutes.
