Individual Berry Pandowdies
- 5 c. fresh berries
- 3/4 c. sugar
- 2 Tbsp. cornstarch
- 1 1/4 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1/2 c. milk or buttermilk
- 1/2 stick butter, softened
- sugar and nutmeg
- vanilla ice cream (optional)
- Heat oven to 375u0b0.
- In a large bowl, toss berries with 1/4 cup sugar and cornstarch.
- In a medium bowl, combine flour, remaining sugar, baking powder and salt.
- Add egg, milk and butter; mix until well combined.
- Prepare six 8-ounce custard cups with nonstick cooking spray.
- Divide berry mixture among the custard cups.
- Top each cup with batter.
- Sprinkle each with sugar and nutmeg.
- Place cups on baking sheet; bake for 30 to 40 minutes, or until tops are golden.
- Serve warm with a scoop of vanilla ice cream.
