Smoked Trout Peach Salad With Creamy Avocado Dressing
- FOR THE AVOCADO DRESSING:
- 1 whole Ripe Avocado
- 1/4 cups Plain Greek Yogurt
- 1/2 whole Lemon, Juiced
- 1/2 cups Water
- 1/2 teaspoons Salt
- 2 Tablespoons Chopped Chive
- FOR THE TROUT SALAD:
- 5 ounces, weight Spring Salad Greens
- 1 bunch Radished, Stems Removed And Sliced Thin
- 1 whole Ripe Peaches, Pitted And Sliced Thin
- 12 ounces, weight Smoked Trout, Broken Into Pieces
- Place all the ingredients for the avocado dressing in the food processor (or blender). Puree until smooth.
- Using a large spoon, pool the dressing on 4-6 salad plates, or streak across the plates like at a restaurant.
- Arrange the greens on the plates, followed by radishes, peach slices and smoked trout chunks.
