Chicken Breast Strips
- 6 chicken breast filets
- 1 1/2 eggs, beaten
- 1 c. seasoned bread crumbs
- 1 1/2 Tbsp. oil
- 1 (4 oz.) can sliced mushrooms, drained
- 1 clove garlic, minced
- 2 1/2 Tbsp. wine
- 1 (10 oz.) can chicken broth
- 1 1/2 oz. Mozzarella cheese, shredded
- Rinse chicken and pat dry.
- Cut each fillet into 4 long strips.
- Combine with eggs in bowl.
- Chill overnight.
- Roll in crumbs, coating well.
- Brown in oil in large skillet.
- Alternate layers of chicken, mushrooms and garlic in 9 x 13-inch baking dish until all ingredients are used.
- Pour mixture of wine and broth over top.
- Bake, covered, at 350u0b0 for 30 minutes.
- Bake, uncovered, for 25 minutes.
- Sprinkle with cheese.
- Bake for 5 minutes longer.
- Yield:
- 8 servings.
